Grilled marinated yellow snapper laid on a bed of papaya, cucumber, scallions, cilantro, baby spinach dressed with a tangy, spicy, sweet lime dressing.

“Sabayon”
Light cream whipped with orange rind, juice and a little sherry

Sunset Cocktails
“Creamy Caribbean lobster dip”
Flaked grilled lobster stirred into a creamy, crunchy bubbling mixture of cheeses and vegetables served with an assortment of crackers

Dinner
Tomato and Red Onion Salad

Herb Roasted Lamb Chops
Cous Cous
Caramelized Shallots
Papaya & cucumber salad, garnished with toasted almond salad and drizzled with lime dressing

Coconut Cheese Cake

Red/white wine of choice
